An easy recipe that works on a simple ratio allowing you to play with flavours you enjoy.
INGREDIENTS
Makes 8 small bars.
Basic principle is to balance the dry and wet ingredients. Approximately 1.5 dry : 1 wet
Dry ingredients:
1/3 cup sunflower seeds
1/3 cup chia seeds
1/3 flaxseeds (linseed)
1/3 cup oats
1/4 cup plant based protein powder (we use pea or rice)
sea salt to taste
1-2 tbsp cacao powder (optional)
1 tsp maca powder (optional)
Some alternative suggestions (nuts, quinoa, hemp seeds, amaranth, cayenne pepper, nutmeg)
Wet ingredients:
1 tbsp coconut oil
1 tsp apple cider vinegar
1/2 zest of orange (optional citrus flavour)
juice from 1/2 orange, lemon or lime (can be replaced with a dairy free milk or water to remove citrus flavour)
3/4 cup pitted dates
1-3 tsp maple syrup (optional, the dates are already pretty sweet)
Some alternative suggestions (berries, banana, pear, tahini, fresh ginger)
METHOD
We found that unless you have a really good blender that it's best to do this in two stages, dry then wet.
Blend all dry ingredients to a fine powder and add to a mixing bowl.
Blend all wet ingredients, this may require you to shake and pulse the blender. Your after a rough paste. Add to the mixing bowl.
Mix both sets of ingredients together with the back of a spoon. This should be completely combined to form a solid paste that will hold its shape.
Check consistency, taste a little bit of the mix and if quite dry in the mouth adjust by adding a splash more freshly squeezed juice or water. Repeat the process until the mixture has a moist sheen but still firm. (if you take it too far the other way add in a bit more powdered dry ingredient).
Place in a storage container, push down and refrigerate, these can be cut into bars later. Alternatively, make balls and refrigerate.
